Speaking of asian cinema and great director/actor combinations, I was a little surprised Wong Kar Wai and Tony Leung Chi Wai not getting a mention. Brilliant director, brilliant actor, and their mutual output has been tremendous, especially critically.
Excellent list, actually. I would have totally overlooked Russel/Carpenter, though I do really like The Thing and Big Trouble in Little China and enjoy the Plissken movies for what they are.
I know it is a bit more recent, but I am surprised that two pairings didn't get an honorable mention:
Christopher Nolan and Christian Bale who are currently working on their forth movie together. (Batman Begins, The Prestige, The Dark Knight, The Dark Knight Rises)
Martin Scorsese and Leonardo DiCaprio who are currently working on their fifth movie together. (Gangs of New York, The Aviator, The Departed, Shutter Island, Xtreme City)
I didn't expect these pairings to make the list, they are too contemporary, but at least get a nod.

all joking aside, the films i've seen where he's directed and starred have been brilliant films.
Totally agree...I was going to mention Clint Eastwood who was the first person that came to mind.
