Reputedly Kevin Reynolds' original cut of the movie was over 3hrs long, a lot darker in tone and did in fact feature the Sheriff of Nottingham more prominently. Which is why Kevin Costner locked him out of editing and recut the movie.
The extended version can be seen on some DVD and Blu-Ray releases and the tone is indeed much darker. His helper does indeed have "his lying tongue" removed and can't speak when threatened by Robing and Azeem, Gisbourne's death is longer and more painful and there's much more about the relationship between the Sherrif and the witch and the satanic worship.
