What a shame that the growing pains of this system had to wreck Raimi's otherwise successful trilogy.

To be fair, it's true and it's realistic. This is how some women act. If Peter would have just walked off the other way she would have became even more obsessed.
She is like this in the comics too. She wants him, yet not to close because she likes the game. So Peter kind of explores elsewhere.
Honestly it's why I like Gwen more as a character. She was often exclusive to Peter and both of them were too worried about other things to really cheat or do anything to hurt that relationship.
